How can the University of Michigan encourage and facilitate eating seasonally among students in the residential dining halls?
Sustainability Courses
​U of M should offer courses to better inform students of sustainable food systems.

• Creating interdisciplinary courses with a focus on sustainable food systems can enrich students’ understanding on the topic and provide practical knowledge on how to effectively apply the principles learned within their own university’s food program. (Rojas)
• Pre-existing environmental courses at the university could be enhanced to include food-related segments in the curriculum.
